The Hop Over is a modern cocktail that was created by Tom Richter at Dear Irving in New York City, New York. It uses a hoppy IPA as the aromatic foundation of the drink and complements it with velvet falernum liqueur, florals, citrus, and genever, which is the predecessor to modern gin.
Cocktail Ingredients
To make this cocktail, you’ll need the following ingredients:
India Pale Ale: This is a type of beer made with malted barley, hops, water, and yeast, which are brewed and heavily hopped to develop a bitter, aromatic flavor.
Genever: This is a spirit made by fermenting and distilling malted grains and yeast with juniper berries and other botanicals, then typically aging it to develop a malty, juniper-forward flavor.
Velvet Falernum Liqueur: This is a liqueur made with limes, almonds, cloves, ginger root, distilled alcohol, water, and sugar, which are blended and infused to develop a sweet, spiced Caribbean flavor.
Lemon Juice: This is the liquid extracted from the flesh of ripe lemons that has a sweet, tangy flavor and light yellow color.
Orange Flower Water: This is a floral distillate made with orange blossoms and water, which are steam-distilled to develop a delicate, floral aroma.
Lemon Wheel: This is a lemon slice that has been cut into a circular shape.

This cocktail has the following flavor profile:

• Taste: Distinct hoppy IPA flavor softened by citrus and falernum

Kendall’s Take: “I thought that the maltiness of the IPA and genever mixed surprisingly well in this recipe, and when combined with the other flavors, the Hop Over becomes a surprisingly light warm-weather sipper. If you like IPAs but don’t necessarily enjoy how heavy they can be, this drink is a great way to get the best part of both worlds. I don’t usually drink beer at all, but even I thought this was a tasty beer-based concoction that I would make again if I could drink beer.”

Ingredients
Method
Fill a pint glass with cracked ice.
Add genever, velvet falernum liqueur, and orange flower water to pint glass.
Top with beer.
Using a bar spoon, gently stir for 3-5 seconds.
Garnish with lemon wheel.
