Cocktail History
The Apple Pie Gimlet is a Sips From Scripts original cocktail that was created as a variation of a similar drink first published in the book Gin O’ Clock: A Year of Ginspiration by Craft Gin Club. This version uses London Dry Gin, pares down the lemon, and adds a homemade apple cinnamon syrup for more spice and seasonal flavor.
Cocktail Ingredients
To make this cocktail, you’ll need the following ingredients:
London Dry Gin: This is a type of gin made with juniper berries, botanicals, and alcohol that has been infused with flavor through redistillation without artificial ingredients or colors. We used Broker’s Premium London Dry Gin because it’s versatile and high proof. For a mocktail version of this drink, try MONDAY Zero Alcohol Gin in place of the gin.
Apple Cinnamon Syrup: This is a sweetener made with apple cider, cinnamon sticks, and white sugar. We made ours at home using Alex’s sous vide recipe.
Lime Juice: This is the liquid juice of a lime. We used freshly squeezed lime juice.
Aromatic Bitters: This is a food product made with botanicals, herbs, and alcohol. We used Angostura Aromatic Bitters. For a mocktail version of this drink, try All The Bitter Alcohol-Free Aromatic Bitters in place of the aromatic bitters.
Cinnamon Stick: This is a dried spice that has been rolled into a stick. We used cinnamon sticks from the bulk section at our local grocery store.
Apple: This is a red fruit with a mealy texture. We used a Honeycrisp apple.
Bartending Tools
To make this cocktail, you’ll need the following bar tools:
Jigger: This is used to measure and pour ingredients. We used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.
Boston Shaker: This is used to shake ingredients. We used the Boston shaker from the A Bar Above 14-Piece Silver Bar Set.
Hawthorne Strainer: This is used to strain out ice and solid ingredients after the cocktail is shaken. We used the A Bar Above Hawthorne Strainer.
Paring Knife: This is used to cut ingredients. We used the OXO Good Grips 3.5 Inch Paring Knife.
Juicer: This is used to juice citrus. We used the ALEEHAI Manual Fruit Juicer.
Apple Corer: This is used to core and slice apples. We used the OXO Good Grips Apple Corer, Slicer, & Divider.

Tasting Notes
The Apple Pie Gimlet features the mild but pleasant aroma of cinnamon, a sweet apple-forward taste that features hints of cinnamon spice in the back of the mouth, and an aftertaste that combines the complex spices of gin and bitters with the comforting flavors of apple and cinnamon.
Our Opinion of This Cocktail Recipe: It took a couple of tries to get this cocktail just right, but we definitely think we landed on a winner! We both loved the Apple Pie Gimlet, and while neither of us is big on baking actual apple pie, this is one version we can’t wait to make for the family this year.
Kendall’s Take: ⭐⭐⭐⭐
“Hello, new favorite fall cocktail! The Apple Pie Gimlet is tart, tasty, and great for fall sipping, especially after Alex tweaked the specifications. Unlike the Spiced Pumpkin Punch from the same book, you can definitely tell this a gin cocktail; the spirit’s flavor is very prominent at first but not overwhelming and is followed by tangy apple and lemon, which I thought was a fabulous combination. I would definitely add this to your Thanksgiving or Christmas dinner menu pronto.”
