Cocktail History
The Apple Pie Gimlet is an autumn cocktail that was first published in the book Gin O’ Clock: A Year of Ginspiration by Craft Gin Club. This version uses London Dry Gin, pares down the lemon a bit, and adds a homemade apple cinnamon syrup for more spice and seasonal flavor.
Cocktail Ingredients
To make this cocktail, you’ll need the following ingredients:
London Dry Gin: This is a type of gin made by redistilling a neutral spirit with juniper berries and other botanicals without added sweeteners to develop a crisp, dry flavor.
Apple Cinnamon Syrup: This is a sweetener made with apple juice, cinnamon sticks, white sugar, and water, which are heated and infused into a syrup with a spiced fruit flavor.
Lime Juice: This is the liquid extracted from the flesh of ripe limes that has a zesty, sour flavor and light green color.
Aromatic Bitters: This is a concentrated flavoring made with a blend of herbs, spices, roots, and botanicals, and distilled alcohol, which are macerated or steeped to develop an aromatic, bittersweet flavor.
Cinnamon Stick: This is a spice made from dried and rolled bark of the cinnamon tree that has a warm, sweet-spicy flavor.
Apple: This is a type of fruit grown on apple trees that has smooth red, green, or yellow skin and a mild, sweet to tart flavor.
Bartending Tools
To make this cocktail, you’ll need the following bar tools:
Jigger: This is used to measure and pour ingredients. I used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.
Boston Shaker: This is used to shake ingredients. I used the Boston shaker from the A Bar Above 14-Piece Silver Bar Set.
Hawthorne Strainer: This is used to strain out ice and solid ingredients after the cocktail is shaken. I used the A Bar Above Hawthorne Strainer.
Paring Knife: This is used to cut ingredients. I used the OXO Good Grips 3.5 Inch Paring Knife.
Juicer: This is used to juice citrus. I used the ALEEHAI Manual Fruit Juicer.
Apple Corer: This is used to core and slice apples. I used the OXO Good Grips Apple Corer, Slicer, & Divider.

Tasting Notes
This cocktail has the following flavor profile:
• Appearance: Pale yellow color
• Aroma: Mild cinnamon and apple
• Taste: Sweet apple-forward flavor with hints of juniper, cinnamon, and citrus
• Finish: Slightly tart lime and baking spices
Kendall’s Take: “Hello, new favorite fall cocktail! The Apple Pie Gimlet is tart, tasty, and great for fall sipping, especially after tweaking the specifications a bit. Unlike the Spiced Pumpkin Punch from the same same book, you can definitely tell this a gin cocktail; the spirit’s flavor is very prominent at first but not overwhelming and is followed by tangy apple and lemon, which I thought was a fabulous combination. I would definitely add this to your Thanksgiving or Christmas dinner menu pronto.”
