The Guava Rose is a frozen cocktail that was created by Junior Merino, a bartender nicknamed “The Liquid Chef” who is well-known for his years-long career creating drinks for several New York City bars, celebrities, and liquor brands. The recipe blends together cachaça, a unique Brazilian rum made from sugarcane juice, with fragrant rose syrup, tart guava, and lime to made a refreshing and romantic drink.
Cocktail Ingredients
To make this cocktail, you’ll need the following ingredients:
Cachaça: This is a type of rum made in Brazil with sugarcane juice, sugar, and alcohol. I used Kachaça! Premium Cachaça.
Rose Syrup: This is a sweetener made with rose water, white sugar, and water. I made mine using this stovetop recipe.
Guava Jelly: This is a fruit spread made with puréed guava, sugar, and water.
Lime Juice: This is the liquid juice of a lime. I used freshly squeezed lime juice.
Rose Petal: This is the loose petal of a rose.
Bartending Tools
To make this cocktail, you’ll need the following bar tools:
Jigger: This is used to measure and pour ingredients. I used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.
Paring Knife: This is used to cut citrus into slices or wheels. I used the OXO Good Grips 3.5 Inch Paring Knife.
Juicer: This is used to juice citrus. I used the ALEEHAI Manual Fruit Juicer.
Blender: This is used to blend up ingredients. I used the Cuisinart SPB-7CH SmartPowder Electronic Bar Blender.

Kendall’s Take: “I hadn’t tried guava on its own before using the jam in this cocktail, and I will definitely be revisiting its fruity flavor. I think I would prefer it in a drink that wasn’t blended though; that was my only real qualm with the Guava Rose. Unless I’m sitting poolside on a 100°F day, I don’t reach for frozen drinks. Add a bit more guava, shake it, and strain it, and I’d likely give this five stars.”
