Cocktail History
The Top Hat is a modern cocktail that was created in 2021 by Alex Sukopp, former bartender of the retired Instagram account Sips From Scripts, for his wedding at Villa Bellezza Winery & Vineyards in Pepin, Wisconsin. The recipe is a very simple variation of the Brown Derby, a vintage drink from the 1930s, that adds rosemary, grapefruit, and peppercorn-flavored bitters to the classic’s mix of whiskey, grapefruit, and honey.
Cocktail Ingredients
To make this cocktail, you’ll need the following ingredients:
Bourbon: This is a type of whiskey made in the United States with at least 51% corn, with other grains, water, and yeast, which are distilled and then aged in new charred oak barrels to develop a rich, caramelized flavor.
Grapefruit Juice: This is the liquid extracted from the flesh of ripe grapefruits that has a sweet-tart citrus flavor and light pink color.
Honey Syrup: This is a sweetener made with honey and water, which are heated and infused into a syrup with a sweet flavor.
Rosemary, Grapefruit, & Peppercorn Bitters: This is a concentrated flavoring made with rosemary, grapefruit peels, black peppercorns, herbs, spices, botanicals, and distilled alcohol, which are macerated or steeped to develop a tart, slightly bitter flavor.

Ingredients
Method
Add bourbon, grapefruit juice, honey syrup, and bitters to a shaker.
Fill shaker with cubed ice.
Shake for 10-20 seconds.
Using a Hawthorne and fine mesh strainer, strain into a coupe glass.
