Cocktail History

The Bellini is a classic cocktail that was created in 1948 by Giuseppe Cipriani at Harry’s Bar in Venice, Italy. Usually served at brunch instead of another go-to called the Mimosa, this recipe is made with a simple mixture of peach purée or peach nectar and Prosecco, which is the Italian version of sparkling wine.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Sparkling Wine: This is a carbonated wine made with white or red grapes. This recipe specifically calls for Prosecco, a sparkling white wine made in Italy, so we used Mionetto Prosecco DOC Treviso Brut because it has a crisp and refreshing flavor with notes of peach, apple, and honey. For a mocktail version of this drink, try Gruvi Non-Alcoholic Prosecco in place of the sparkling wine.

Peach Nectar: This is a beverage made with peach juice, sugar, and water.

Peach Slice: This is a slice of a peach that has been cut into a wedge shape.

Bartending Tools

To make this cocktail, you’ll need the following bar tools:

Jigger: This is used to measure and pour ingredients. We used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.

Tasting Notes

The Bellini teases with aromatic notes of sparkling wine and peach, starts with prominent sweet peach flavor that is initially followed by the distinct dryness and effervescence of the Italian Prosecco and leaves strong stone fruit notes in the mouth after the swallow.

Our Opinion of This Cocktail Recipe: It’s hard not to love this age-old Venetian classic since it’s essentially a peach-flavored sparkling wine, and anything the Bellini lacks in complexity is made up tenfold in delicious, easygoing flavor.

Alex’s Take: ⭐⭐⭐
“I’m generally a firm believer that sparkling wine is usually best left to its own devices, and though this drink doesn’t exactly change my mind, I do like it for what it is. Its delicious combination of stone fruit flavor with the brightness of the sparkling wine makes it a great sipper for a breakfast when you only want to get the slightest buzz without going overboard. That said, I do typically prefer my sparkling wine solo, but I would consider this one in the lead up to a big day in which I need to stay sharp.”

Kendall’s Take: ⭐⭐⭐⭐
“This classic deserves its place in history among go-to brunch cocktails, in my opinion. It’s hard not to enjoy a Bellini because it essentially tastes like peach-flavored sparkling wine. The only reason I’m not giving this icon five stars is because it does lack the complexity I like in craft cocktails. I like at least three ingredients in mine these days so they’re a little more fun to make. This one sure is tasty and perfect for a spring brunch or early afternoon family gathering though!”
