The Outer Rim is a Star Wars cocktail that was created at Star Wars: Galaxy’s Edge, an attraction at Disney’s Hollywood Studios in Orlando, Florida and Anaheim, California. Named for the a sparsely populated region in the Tatoo system where smugglers, pirates, and other outlaws were often found, this copycat recipe was made using the Margarita template. It calls for a simple mixture of tequila, lime, sugar syrup, and black salt, but it also adds in tart açaí liqueur and a sludgy passion fruit garnish to give it some other-worldly edge.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Tequila Blanco: This is a spirit made with unaged agave and water. I used Dulce Vida Spirits Organic Tequila Blanco.

Açaí Liqueur: This is a liqueur made with açai berries, sugar, and alcohol. This recipe specially calls for Cedilla Açaí Liqueur, but I used FAIR Açaí Liqueur.

Passion Fruit Purée: This is a fruit spread made with puréed passion fruit, sugar, and water. I used homemade passion fruit purée.

Simple Syrup: This is a sweetener made with white sugar and water. I made mine using this stovetop recipe.

Gelatin: This is a transparent and flavorless food ingredient that is typically made with collagen.

Lime Slice: This is a slice of lime that has been cut into a half wheel shape.

Black Salt: This is a type of volcanic rock salt mined in countries that border the Himalayan mountains.

Kendall’s Take: “From the template, my guess is this is Galaxy Edge’s Star Wars-inspired version of a Margarita most guests would like. I’ll be honest, I don’t know that I would make it again, at least not with the garnishes. The drink itself is quite tasty, but the puréed garnish was a pain in the butt to make. You could easily omit the passion fruit goop on top and still enjoy the cocktail for what it is. Açaí is a fun addition to the mix, and I can see myself sipping on The Outer Rim at a Star Wars-themed party, just without the black salt and sludge.”

Method

  1. Pour black salt onto a plate, rub part of outer rim of glass with lime slice, and roll in black salt until coated.

  2. Add tequila, açaí liqueur, lime juice, rich Demerara syrup, and cubed ice to a shaker.

  3. Pour into salt-rimmed glass.

  4. Add passion fruit purée, simple syrup, and gelatin to a nitro whipper.

  5. Shake nitro whipper for 30 seconds.

  6. Carefully pour fruit purée garnish into top of glass at an angle so it floats on top of the drink.
