Cocktail History

The Gaelic Flip is a modern cocktail that was created by Charles Joly in Chicago, Illinois. It adds an Irish-inspired twist to the iconic Flip template, which pairs a spirit and sweeteners with both the white and the yolk of an egg, by calling for Irish whiskey in place of sherry. It then balances the spiciness of the whiskey and thickness of the egg with sweet fortified wine, simple syrup, allspice liqueur, and an aromatic dusting of nutmeg on top.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Irish Whiskey: This is a type of whiskey made in Ireland made with unmalted or malted barley, cereal grains, spices, and water. I used The Sexton Single Malt Irish Whiskey.

Sweet Vermouth: This is a fortified wine made with grapes, sugar, botanicals, herbs, sugar, and alcohol. I used Carpano Antica Formula Vermouth.

Simple Syrup: This is a sweetener made with white sugar and water. I made mine using this stovetop recipe.

Allspice Liqueur: This is a liqueur made with allspice berries, spices, sugar, and rum. I used St. Elizabeth's Allspice Dram.

Egg White & Yolk: This is both the clear liquid and yellow portion in an egg. I used fresh egg white and yolk.

Grated Nutmeg: This is a spice made from the seed of a nutmeg tree. I used Frontier Co-op Whole Nutmeg.

Bartending Tools

To make this cocktail, you’ll need the following bar tools:

Jigger: This is used to measure and pour ingredients. I used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.

Boston Shaker: This is used to shake ingredients. I used the Boston shaker from the A Bar Above 14-Piece Silver Bar Set.

Hawthorne Strainer: This is used to strain out ice and solid ingredients after the cocktail is shaken. I used the A Bar Above Hawthorne Strainer.

Grater: This is used to grate spices or citrus peel. I used the OXO Good Grips Grater.

Tasting Notes

This cocktail has the following flavor profile:

Appearance: Golden yellow color

• Aroma: Fragrant nutmeg

• Taste: Fairly straightforward dry taste of strong Irish whiskey and nutty vermouth

• Finish: Sweet and spicy whiskey and allspice

Kendall’s Rating: ⭐⭐⭐⭐

Kendall’s Take: "Since I have yet to try one that unseats the French Toast Flip, I have to say this is my second favorite variation of the Flip template that I've tried thus far. Although pretty simple, the Irish whiskey, vermouth, allspice, and nutmeg are a yummy combination of flavors. It has a nutty and slightly sweet taste that sets is apart from other bland versions I've tasted. I would make the Gaelic Flip again around St. Patrick's Day, for sure!"

Ingredients
  • 1.25 fl oz Irish Whiskey
  • 1 fl oz Sweet Vermouth
  • 0.33 fl oz Simple Syrup (Click for Recipe)
  • 1 tsp Allspice Liqueur
  • 1 Egg
  • 1 pinches Grated Nutmeg
Method
  1. Add whiskey, sweet vermouth, simple syrup, allspice liqueur, egg white, egg yolk, and cubed ice to a shaker.

  2. Shake for 10-20 seconds.

  3. Remove ice from shaker.

  4. Dry shake for 5-10 more seconds to emulsify egg.

  5. Strain into an Irish coffee mug.

  6. Garnish with grated nutmeg.
