Cocktail History

The French Toast Flip is a modern cocktail that was created by Erick Castro at Polite Provisions in San Diego, California. This variation of the recipe from Winter Drinks: 70 Essential Cold-Weather Cocktails by PUNCH adds a symphony of brunch flavors to a classic Flip template, including a sherry, Scotch whisky, and apple brandy base, maple and allspice syrups, egg, and citrus bitters.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Oloroso Sherry: This is a type of fortified wine made in Spain with palomino grapes. We used Emilio Lustau Dry Oloroso Don Nuño Sherry because it has a rich and nutty flavor. For a mocktail version of this drink, try Non-Alcoholic Sherry Flavoring in place of the sherry.

Scotch: This is a type of whiskey made in Scotland with malt or grain, spices, alcohol, and water. We used Tomatin Distillery 12-Year Scotch because it’s a smooth single malt whisky with a classic, flavorful profile. For a mocktail version of this drink, try Escape Mocktails Green Label Single Malt Whiskey Non-Alcoholic Alternative in place of the whisky.

Apple Brandy: This is a type of brandy made with apples, pears, spices, sugar, and alcohol. We used Calvados because it’s a high-quality apple-flavored brandy with notes of pear, apricot, and baking spices. For a mocktail version of this drink, try Escape Mocktails Non-Alcoholic Cognac Alternative and apple cider in place of the apple brandy.

Maple Syrup: This is a syrup made with the sap from maple trees. We used a local maple syrup.

Allspice Syrup: This is a sweetener made with allspice berries, sugar, and water. We made ours at home using Alex’s stovetop recipe.

Egg White & Yolk: This is both the clear liquid and yellow portion in an egg. We used fresh egg white and yolk because they add a rich, silky smooth texture.

Orange & Fig Bitters: This is a food product made with oranges, figs, botanicals, herbs, and alcohol. We used Scrappy’s Bitters “Sycophant” Orange & Fig Bitters.

Ground Cinnamon: This is a spice. We used Simply Organic Ground Cinnamon.

Bartending Tools

To make this cocktail, you’ll need the following bar tools:

Jigger: This is used to measure and pour ingredients. We used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.

Boston Shaker: This is used to shake ingredients. We used the Boston shaker from the A Bar Above 14-Piece Silver Bar Set.

Hawthorne Strainer: This is used to strain out ice and solid ingredients after the cocktail is shaken. We used the A Bar Above Hawthorne Strainer.

Tasting Notes

The French Toast Flip starts with the enticing aroma of cinnamon and has a thick, heady flavor that combines apple and maple with the slight woodsiness of Scotch, all of which goes down with the sweet aftertaste of sherry, orange, and maple.

Our Opinion of This Cocktail Recipe: We have yet to meet a Flip we didn’t enjoy somewhat, but the French Toast Flip immediately shot to the top of our list of favorites. And since its ingredients are so common, we hope you’ll treat yourself to one as soon as you can too. It deserves a spot on your must-try list!

“I’m not usually one for sweeter drinks, but this one was honestly very tasty. We’re pretty sure it was a typo, but the original specifications in the book called for four (yes, four!) full ounces of maple syrup, but we ended up using just one. That paired with the Tomatin 12-Year Scotch and Calvados made this drink absolutely delightful. It was all at once aromatic, sweet, boozy, heavy, and delicious. It’s also definitely worthy of its name, with flavors of a classic nostalgic breakfast.”

“I don’t typically care for egg in my cocktails, but my goodness, this is such a delicious cocktail! It’s sweet but not so much that those who don’t usually enjoy dessert drinks would take one sip and nope out of finishing the rest right away. I would definitely describe it as brunch in a cocktail, so the name is fitting. Give this a try next time you want to make drinks at breakfast but are interested in something other than a Mimosa.”

Method

  1. Add sherry, Scotch, apple brandy, maple syrup, allspice syrup, egg white, egg yolk, bitters, and cubed ice to a shaker.

  2. Shake for 10-20 seconds.

  3. Remove ice from shaker.

  4. Dry shake for 5-10 more seconds to emulsify egg.

  5. Strain into a goblet or cocktail glass.

  6. Garnish with ground cinnamon.
