The British 75 is a modern cocktail that was created by Highclare Castle Gin. It's a simple variation of the classic French 75 that uses sparkling wine, sugar, lemon, and their London Dry Gin, an award-winning spirit they produce in one of the oldest copper gin stills from the 1800s at England’s oldest gin distillery.

Sparkling Wine: This is a carbonated wine made with white or red grapes. I used Villa Bellezza Winery Brillante.
Gin: This is a spirit made with juniper berries, botanicals, and alcohol. I used Highclere Castle London Dry Gin.
Lemon Juice: This is the liquid juice of a lemon. I used freshly squeezed lemon juice.
Simple Syrup: This is a sweetener made with white sugar and water. I made mine using this stovetop recipe.
Lemon Wedge: This is a slice of lemon that has been cut into a wedge shape.

Hawthorne Strainer: This is used to strain out ice and solid ingredients after the cocktail is shaken. I used the A Bar Above Hawthorne Strainer.
Paring Knife: This is used to cut ingredients. I used the OXO Good Grips 3.5 Inch Paring Knife.
Juicer: This is used to juice citrus. I used the ALEEHAI Manual Fruit Juicer.

Add gin, lemon juice, simple syrup, and cubed ice to a shaker.
Shake for 10-20 seconds.
Strain into a cocktail glass.
Top with sparkling wine.
Garnish with lemon wedge.
