The Top Hat is a modern cocktail created in 2021 by former bartender Alex Sukopp for his wedding at Villa Bellezza Winery & Vineyards. A twist on the Brown Derby from the 1930s, it layers rosemary and peppercorn bitters with whiskey, grapefruit, and honey for a bright, aromatic finish.
Add bourbon, grapefruit juice, honey syrup, and bitters to a shaker.
Fill shaker with cubed ice.
Shake for 10-20 seconds.
Using a Hawthorne and fine mesh strainer, strain into a coupe glass.
