The Hop Over is a modern cocktail that was created by Tom Richter at Dear Irving in New York City, New York. It uses a hoppy IPA as the aromatic foundation of the drink and complements it with velvet falernum liqueur, florals, citrus, and genever, which is the predecessor to modern gin.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Hoppy IPA Beer: This is a type of beer made with hops, malts, yeast, and water with strong hops and citrus or floral flavors. I used Hinterland Brewery American IPA.

Genever: This is a spirit made in Holland or Belgium with juniper berries, spices, and malt wine.

Velvet Falernum Liqueur: This is a liqueur made with ginger, lime, almond, cloves, sugar, and alcohol.

Lemon Juice: This is the liquid juice of a lemon. I used freshly squeezed lemon juice.

Orange Blossom Water: This is a flavored water made by steeping orange blossoms in water. I used Cortas Premium Orange Blossom Water.

Lemon Wheel: This is a lemon slice that has been cut into a circular shape.

Kendall’s Take: "I thought that the maltiness of the IPA and genever mixed surprisingly well in this recipe, and when combined with the other flavors, the Hop Over becomes a surprisingly light warm-weather sipper. If you like IPAs but don't necessarily enjoy how heavy they can be, this drink is a great way to get the best part of both worlds. I don't usually drink beer at all, but even I thought this was a tasty beer-based concoction that I would make again if I could drink beer."

Ingredients
  • 3 fl oz Hoppy IPA
  • 1 fl oz Genever
  • 0.75 fl oz Velvet Falernum Liqueur
  • 0.5 fl oz Lemon Juice
  • 2 dashes Orange Flower Water
  • 1 Lemon Wheel
Method
  1. Add genever, velvet falernum liqueur, orange flower water, and cracked ice to a pint glass.

  2. Top with beer.

  3. Stir for 3-5 seconds.

  4. Garnish with lemon wheel.
