Cocktail History

The Rome With a View is a modern cocktail that was created by Michael McIlroy at Attaboy in New York City, New York. Meant to be a cross between an Americano and a Collins template, it mixes the bittersweet Italian liqueur Campari with vermouth like the former and adds in tart citrus, simple syrup, and soda water of the latter to create one of the more palatable Campari drinks out there.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Campari: This is a liqueur made in Italy with gentian root, rhubarb, citrus, herbs, aromatic plants, fruit, and alcohol. For a mocktail version of this drink, try Giffard Non-Alcoholic Bitter Syrup in place of the bitter liqueur.

Dry Vermouth: This is a fortified wine made with grapes, sugar, botanicals, herbs, sugar, and alcohol. We used Dolin Dry Vermouth de Chambéry because it has a light and airy flavor profile with notes of Alpine herbs. For a mocktail version of this drink, try Lyre’s Non-Alcoholic Apéritif Dry in place of the dry vermouth.

Lime Juice: This is the liquid juice of a lime. We used freshly squeezed lime juice.

Simple Syrup: This is a sweetener made with white sugar and water. We made ours at home using Alex’s stovetop recipe.

Soda Water: This is a type of water that has been infused with carbon dioxide gas under pressure. We used Topo Chico Sparkling Mineral Water because it’s light, essentially flavorless, and refreshing.

Orange Slice: This is a slice of orange that has been cut into a half wheel shape.

Bartending Tools

To make this cocktail, you’ll need the following bar tools:

Jigger: This is used to measure and pour ingredients. We used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.

Boston Shaker: This is used to shake ingredients. We used the Boston shaker from the A Bar Above 14-Piece Silver Bar Set.

Hawthorne Strainer: This is used to strain out ice and solid ingredients after the cocktail is shaken. We used the A Bar Above Hawthorne Strainer.

Paring Knife: This is used to cut ingredients. We used the OXO Good Grips 3.5 Inch Paring Knife.

Juicer: This is used to juice ingredients. We used the ALEEHAI Manual Fruit Juicer.

Tasting Notes

The Rome With a View has heavy orange aromas and starts with a slight citrus-forward taste made up of herbal vermouth and orange Campari notes, and it has a lingering flavor that is just briefly bitter before becoming citrusy.

Our Opinion of This Cocktail Recipe: As a shocking as it sounds, Kendall really loved this drink, which we’re taking as proof that Campari-averse friends might enjoy it as well. Meanwhile, Alex was, of course, on board immediately and said he’d even consider adding gin to his next Rome With a View to make it a bit more like a Negroni.

Alex’s Take: ⭐⭐⭐⭐
“The first taste I took of this was the last few drops from the shaker, so I got the full force of it without the soda water, and naturally, I loved it. My original thought was that it tasted kind of like Campari but more so somehow. Once we sat down to sip on the finished product, Kendall surprised me by saying she loved it, even though she isn’t generally a Campari fan, and I had to agree. The addition of lime adds all of the right tart notes to help elevate the Campari, while dry vermouth in lieu of sweet adds plenty of extra herbal notes and simple syrup helps to tame the harder flavors of everything. All in all, this was an incredibly well-rounded apéritif, and although I am a firm lover of a good ole Americano, I can see this right alongside it in my go-to low-ABV patio sippers list.”

Kendall’s Take: ⭐⭐⭐⭐
“Folks, I think we did it. We found a Campari-forward drink that I actually enjoyed quite a lot. Unlike most recipes made with the Italian liqueur, the Campari isn’t immediately bracing at the beginning of the sip; its bitterness only really comes through near the swallow. I think the addition of citrus is what makes the difference for this fairly common template. The tartness cuts right through the gentian root and make for one refreshing patio drink. I might just make this again to get myself more used to Campari this summer!”

  2. Shake for 10-20 seconds.

  3. Strain into a highball glass filled with fresh cracked ice.

  4. Top with soda water.

  5. Garnish with orange slice.
