The Through The Wardrobe is a modern cocktail that was created by Jassy Davis and was first published in the book Winter Warmers: 60 Cosy Cocktails for Autumn & Winter. Inspired by one of the author’s favorite winter-set books The Lion, The Witch, & The Wardrobe, the recipe adds refreshing notes of winter pine, herbal Suze, and frothy egg white to the classic Gimlet template made with gin and lime.
Rinse coupe glass with Suze by adding it the glass, rolling it around until coated, and discarding the excess.
Add gin, pine syrup, lime juice, and egg white to a shaker.
Fill shaker with cubed ice.
Shake for 10-20 seconds.
Using tongs, remove ice from shaker.
Dry shake for 5-10 more seconds to emulsify egg.
Using a Hawthorne strainer, strain into Suze-rinsed coupe glass.
Garnish with lime twist.
