The Pollinator’s Paradise is a Novel Nightcaps original cocktail created in 2023 for a tasting at 200 Main Wine & Art Gallery in Eau Claire, Wisconsin. Inspired by the wildflower fields of the Canadian Rockies, it blends floral vodka with elderflower, lemon, honey, and lavender, then finishes with a splash of sparkling wine for a bright, springtime fizz.
Add vodka, elderflower liqueur, lemon juice, honey syrup, and bitters to a shaker.
Fill shaker with cubed ice.
Shake for 10-20 seconds.
Add fresh cracked ice to a lowball glass.
Using a Hawthorne strainer, strain into lowball glass.
Top with sparkling wine.
Garnish with dehydrated lemon wheel.
