This is a recipe for homemade honey syrup that was used for the first time in the Bee’s Knees, a vintage cocktail that’s famous for its blend of gin, honey, and citrus.
Add 315 ml honey and 160 ml hot water to a saucepan.
Heat over medium high heat while stirring for 3-5 minutes until honey is dissolved.
Remove from heat and let cool for 5 minutes.
Pour syrup into a squeeze bottle or pouch with a spout using a funnel, then refrigerate or freeze.
