The Caribe Daiquiri is a modern tiki cocktail that was created by Pablo Moix at DAMA, a Latin-inspired restaurant and bar in Los Angeles, California. It’s made using the classic Daiquiri template that calls for rum, citrus juice, and sugar, but this version adds in fresh pineapple juice for more tropical flair.
Add rum, pineapple juice, lime juice, and simple syrup or superfine sugar to a shaker.
Fill shaker with cubed ice.
Shake for 10-20 seconds.
Using a Hawthorne and fine mesh strainer, strain into a coupe glass.
Garnish with lime slice.
