Cocktail History

The Caribe Daiquiri is a modern tiki cocktail that was created by Pablo Moix at DAMA, a Latin-inspired restaurant and bar in Los Angeles, California. It's made using the classic Daiquiri template that calls for rum, citrus juice, and sugar, but this version adds in fresh pineapple juice for more tropical flair.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Dark Rum: This is a type of rum made with sugarcane, spices, and water that has been barrel aged for an extended period of time. I used Ron Cihuatán 8 Year Indigo Rum.

Pineapple Juice: This is the liquid juice of a pineapple. I used fresh pineapple juice.

Lime Juice: This is the liquid juice of a lime. I used freshly squeezed lime juice.

Simple Syrup: This is a sweetener made with white sugar and water. I made mine using this stovetop recipe.

Lime Slice: This is a slice of lime that has been cut into a half wheel shape.

Bartending Tools

To make this cocktail, you’ll need the following bar tools:

Jigger: This is used to measure and pour ingredients. I used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.

Boston Shaker: This is used to shake ingredients. I used the Boston shaker from the A Bar Above 14-Piece Silver Bar Set.

Hawthorne Strainer: This is used to strain out ice and solid ingredients after the cocktail is shaken. I used the A Bar Above Hawthorne Strainer.

Chef’s Knife: This is used to cut larger fruits and vegetables into slices for the garnish. I used the OXO Good Grips 8-Inch Chef’s Knife.

Pineapple Corer: This is used to remove the core of the pineapple before it’s juiced. I used the OXO Good Grips Stainless Steel Pineapple Corer.

Paring Knife: This is used to cut ingredients. I used the OXO Good Grips 3.5 Inch Paring Knife.

Juicer: This is used to juice citrus, fruits, and vegetables. I used the ALEEHAI Manual Fruit Juicer for the citrus and the Hamilton Beach Large Juicer for the pineapple.

Tasting Notes

This cocktail has the following flavor profile:

Appearance: Bright yellow color

• Aroma: Pineapple and spices

• Taste: Surprisingly dry pineapple and rum flavor rounded out by citrus

• Finish: More rum funk and tropical fruit

Kendall’s Rating: ⭐⭐⭐⭐

Kendall’s Take: "I put this recipe on my tasting calendar because I love Daiquiris and pineapple and I was excited to find out what they tasted like together. Overall, the Caribe Daiquiri is just a very simple drink that you can't really make incorrectly. The rum you choose does greatly influence the flavor of the recipe, however, so be sure to use one you know you like in cocktails. For example, I ended up making this one twice because I thought the Cihaután 8 Year Indigo Rum was just a touch too overpowering and sweet."

Ingredients
  • 2 fl oz Dark Rum
  • 0.75 fl oz Pineapple Juice
  • 0.5 fl oz Lime Juice
  • 0.5 fl oz Simple Syrup (Click for Recipe)
  • 1 Lime Slice
Method
  1. Add rum, pineapple juice, lime juice, simple syrup or superfine sugar, and cubed ice to a shaker.

  2. Shake for 10-20 seconds.

  3. Strain into a cocktail glass.

  4. Garnish with lime slice.
